American Pale Ale

American Pale Ale

A building is only as good as it's foundation. That's why we consider Pale Ale to be our bedrock.

We wanted to create a well balanced beer that anybody can enjoy. Our Pale Ale is a full-bodied ale that's deep copper in color. The malty sweetness of the mash is offset by a generous amount of Magnum bittering hops. The remainder of the late addition hops contribute a delightful citrus/floral note that will lighten anybody's spirits.

It's a great introduction for people who are interested in trying something other than the “standard” beers in the marketplace.

 

Amber Ale

There is a broad spectrum of Amber Ales in this country. Some in this style have a very malt forward presence with restrained hop bitterness, while brewers on the west coast have popularized bigger hoppier versions of the style.

We prefer to take things a little easier in the high country, so we brew our Amber Ale to be an easy drinking, well balanced beer that starts with a soft hop nose and finishes with a nice malty sweetness.

With the highways being as curvy as they are in the mountains, sometimes it's better to be in the middle of the road.

Smoke & Spice Porter

This staff favorite is a limited release beer that is highly anticipated every year. Using specialty roasted malts to create a classic Porter base, we spice the beer with locally sourced ingredients that will tantalize any pallet. We include fresh yellow curry, two types of cinnamon, ghost pepper-infused salt and alder wood smoked salt for a new take on the spiced seasonal ale. Coming in at a ABV of 8.5%, this beer is a true Winter Warmer! Ask for it with our signature spiced sugar rim for a dessert-like treat!

What would a squirrel be without his nuts?

We selected certain malts for our grain bill that give it that nutty/toasted flavor that squirrels love. We keep the hop additions to a minimum in order for those malty flavors and aromas to shine through. We ferment with a clean neutral yeast that provides for a nice smooth malty finish with just enough residual sweetness that will keep you wanting more.

After all, have you ever seen a squirrel stop at just one nut?

Irish Stout

Many people will avoid this category when trying new beers. They don't like to drink motor oil and honestly, who can blame them? While our Stout is definitely a dark beer and will keep you well lubricated, it's far from motor oil. The specialty grains and fresh yeast provide a wonderful complex beer that delights even the most discernible palate. The roasted character will dominate the first sip, but easing right in behind it will be hints of coffee, vanilla, chocolate and other wonderful toasted flavors and aromas. The next time you're at the lodge don't be afraid to come over to the dark side. Who knows, you might just stay awhile.!

Belgian Tripel

If you like big complex beers, look no further. Our Tripel is brewed using a simple malt bill and only a few hop additions. While the malt and hops do contribute to the final product it's really the yeast that's on display here.

We've had guests tell us they taste hints of raisins, plums, apricots, tangerines, and some spicy notes they can't quite explain. Neither can we, because we don't add anything other than the basic four ingredients (water, barley, hops and yeast). However, due to the strain of yeast and the fermentation process, it produces all these wonderful flavors.

Be careful, many have been lured in by her delicate lacing, sweet aromas and intricate flavors only to realize she's a big 9% beer that will sneak up on you if you over indulge. Don't worry, that's what our lodging is for. Enjoy!

She Gosë Little Crazy

Gose (pronounced goza) is a wheat dominant ale originally brewed in Goslar Germany where the recipe was developed to work with the salty waters of the Gose River in the early 1500’s. Originally brewed with coriander and fermented spontaneously, butlater centuries called for the addition of ale yeast and lactobacillus. We hope you will enjoy our take on a centuries old brew that delivers a light and uniquely drinkable summer sipper!

This seasonal beer is fantastic ale for cooler weather. It delivers a wonderful complexity of malty notes with balanced hop character achieved through the noble fuggle hops. It goes down far too easily for an 8.5 % ABV beer!

Otway IPA

Our Otway IPA is a beer that we brewed as a tribute to the location of our first Outpost, Burnsville, NC. This West Coast Style IPA, and the town, are named after the infamous North Carolina privateer, Otway Burns. With three early addition hops for bittering and Simcoe and Sirachi Ace hops providing the floral and citrus aromas and flavors, this beer is a true flavor experience. Even with a hint of maltiness, resin and grapefruit are the stars of this IPA. For those looking for an even bigger hop experience, be sure to keep an eye out for our limited release Krusher Double IPA.

Kölsch

This German style ale is brewed with a dominant percentage of Pilsner Malt leaving it with a bright straw-yellow hue. It has a prominent but not extreme hop character, and is less bitter than the standard German pale lager.!

Blueberry Wheat

A new addition to our spring line up with very limited availability. Dull orange in complexion with prevalent wheat flavor and a wonderful tartness derived from the blueberries as well as the addition of acidulated malt. It is a “Wheatel bit” like a Shandy, but is a true malt beverage without the addition of any soda or carbonated juice. With the use of 1 pound of local blueberries per gallon from Perry’s Berries, the blueberry flavor is there, but is certainly not a dominant flavor. A crushable spring beer we hope you will enjoy!

Belgian Quad

Our Quad is brewed using a touch of chocolate malt, a liberal portion of special B, and candy sugars made in house. Although the malt and hops do contribute substantially to the final product, the complexity of flavors could never be achieved without the trappist strain of yeast. Expect deep malty notes with raisin, fig, and other spicy characteristics that are difficult to explain.!

Backwoods Blonde

This easy going blonde was born in the valley of Plumtree, NC along the banks of the North Toe River in the county of Avery. We hope you will find time to see where the journey began. Your new favorite Lawnmower beer, you can expect a smooth start and clean finish. Not too fussy, extremely sessionable, and certainly refreshing!

This porter is what happens when our Stout and our Nut Brown Ale have a love child. Using artisan cacao nibs and locally-roasted coffee extract from our friends at Bald Guy Brew, this beer is set apart from other porters; delivering a smooth brew with a distinct hop character that finishes with roasted dark chocolate and biscuit notes. A slight residual sweetness will cleanse your pallet so that each sip is as multi-faceted as the last. A winter seasonal that is very likely to become a mainstay. Enjoy!

Halle Blackberry was an experimental brew that surpassed our expectations. Brewed with 7 malts, house made dark candy sugar, local blackberries, and noble hops for smooth bittering. Aged in a stainless vessel with artisan cacao nibs and Defiant Whiskey oak spirals from our friends in Golden Valley, NC. This Imperial Porter presents a medley of mild roasted flavors with peaty chocolate and beautiful oak character that plays very well with the notes of blackberry. Cheers!
